I just want to say I adore your blog! Last time you responded to one of my comments, I freaked out and screenshot it (seriously, my favorite plant based bloggers are like celebrities to me). This recipe was amazing! Right after my chickpeas got done cooking in my instant pot, I made hummus and added these garlic herb burst tomatoes on top. Chef's kiss. This recipe was divine.
